Featured Local Farm - Hidden Hills Dairy

Located in the South Central Pennsylvania countryside, Hidden Hills Dairy was established in 1955 by Ray and Elaine Sollenberger and was renowned for raising quality, stress-free, high production cows. Their daughter, Lori Knepp, and her husband, Rex, have continued their family’s time-honored tradition to detail in making small batch, artisan cheese since 2005. Using natural feeding methods for the cows, the raw milk is the base in creating several different kinds of local, high quality cheeses.

Starting as a sandwich shop and Salumeria in Denver, Colorado, they are now also a locally sourced, fresh butcher shop and are a national purveyor of their award-winning products. Along with their line of “High Country Salami” products, they have also accumulated many accolades including Best New Deli in Denver 2015, Best Sandwich Shop in Denver 2016, 2 Good Food Awards in 2017, and the Grand Champion of Charcuterie Masters in New York City in 2018.
