This is Folly Cheese Company's inaugural cheese.

The 15 lb wheel is modeled after many of the Swiss-French alpine style cheeses that the owners of Folly Cheese Company got into cheesemaking for.

This little baby is nutty and firm but with a slightly longer texture. It's got a fatty body and some acidity that cleans up for that next bite. Folly uses Organic Jersey Milk to make this full fat cheese and age it for four to six months tasting along the way while we wash and age in the caves.

Older pieces may develop some lactic acid "crunchies" which we absolutely adore. These are signs of a perfectly aged cheese.

Call them crazy, but at 27, with no money and a little girl on the way, Ashley and Christian founded Folly Cheese Co. in Tomales, California.

At Folly Cheese, their mission will always be to make the cheeses that we want to eat every day. They are committed to using the most sustainable sourcing and manufacturing practices, while supporting small-scale Organic family farms who are committed to improving the environment through agriculture.

To meet their mission, they only source Organic milk from (extremely) local dairies. They support small dairies by paying a fair price for milk and Folly thinks their great quality milk shows through in their cheeses.

Ashley and Christian believe in staying small and believe in an impeccable attention to detail. They are proud of every piece of cheese they make and hope you enjoy it as much as we do.
