Haystack Mountain Creamery's first mixed-milk cheese, Buttercup is a blend of pasteurized local cow and goat milk. After the cheese is formed, the wheels are dipped in wax and aged for 30 to 60 days. Buttercup's name and signature pale yellow color is the result of the high beta-carotene content in the grass foraged by the cows. Haystack Mountain thinks of this mild, easygoing, semi-soft cheese as their "Swiss Army knife" in the kitchen: use it as a melter, slicer, grater, or snacker. Kids go crazy for it, but they know more than a few grown-ups do, too.
Serving Suggestions: Toasted ham-and-cheese sandwiches, macaroni and cheese, egg dishes, casseroles, quesadillas, or souffles.
Pairing Suggestions: A Dortmunder or Pilsner and Buttercup make a mean mac and cheese combo. If you're under 21, pair with a Sparking Apple or Clementine Izze for a school lunch your classmates will envy.

Your cheese is hand picked and shipped right from their cheese cave to your door. To ensure the quality of the cheese during delivery, all shipments will go out Monday through Wednesday with 1-2 day delivery.

Why Haystack Mountain cheese?
First off, it’s just delicious. Our cheesemaker Jackie Chang and her team have the patience, skill and sense of adventure to create cheeses known for their clean, fresh flavor profiles, free of “goaty” aftertaste. Even if you’ve shied away from goat cheese in the past, give Haystack’s a try. We can’t keep track of how many goat cheese converts we’ve won over with our products.
Second, all Haystack Mountain cheeses are handmade and free of additives or preservatives. We use the highest quality microbial (aka vegetarian) rennet, traditional cheesemaking techniques, and our cheeses are free of preservatives and artificial flavors. Nothing but pure delicious fat and protein.
Third, in keeping with tradition of the true Colorado locally sourced spirit, Haystack Mountain has partnered with our neighbor, Longmont Dairy, to create some of the most delicious cheeses made from cow’s milk and cow/goat milk blends. We’ve also partnered with CCI for our goat milk supply, and enjoy a mutually beneficial arrangement which enriches the lives of our community.
