Funkmeister loosely translates to “master, boss, chief, foreman of the funk.” Funkmeister is an 8oz. double cream washed rind cheese made from organic cow’s milk. The cheese is washed in a cultured brine as it ages. The brine imparts a funky, pungent aroma and deliciously savory flavor profile. The texture softens and flavors intensify over the eight-week shelf life.

Funkmeister shines on a cheese board or atop a fancy sandwich. On a cheese board pair with charcuterie, and savory preserves. Serve with a floral, piney IPA.

Ingredients: Cultured pasteurized organic cow milk, organic cow cream, salt, vegetable enzymes.

Our partners at Haystack Mountain Goat Dairy are farmstead cheese making professionals using old world techniques and recipes. Your cheese is hand picked and shipped right from their cheese cave to your door. To ensure the quality of the cheese during delivery, all shipments will go out Monday through Wednesday with 1-2 day delivery.

Why Haystack Mountain cheese?

First off, it’s just delicious. Our cheesemaker Jackie Chang and her team have the patience, skill and sense of adventure to create cheeses known for their clean, fresh flavor profiles, free of “goaty” aftertaste. Even if you’ve shied away from goat cheese in the past, give Haystack’s a try. We can’t keep track of how many goat cheese converts we’ve won over with our products.

Second, all Haystack Mountain cheeses are handmade and free of additives or preservatives. We use the highest quality microbial (aka vegetarian) rennet, traditional cheesemaking techniques, and our cheeses are free of preservatives and artificial flavors. Nothing but pure delicious fat and protein.

Third, in keeping with tradition of the true Colorado locally sourced spirit, Haystack Mountain has partnered with our neighbor, Longmont Dairy, to create some of the most delicious cheeses made from cow’s milk and cow/goat milk blends. We’ve also partnered with CCI for our goat milk supply, and enjoy a mutually beneficial arrangement which enriches the lives of our community.
