Haystack Mountain Goat CamembertHaystack Mountain Creamery
These surface-ripened bloomy-rind wheels are styled after the classic cow’s milk cheese of Normandy, which ripens from the outside in and grows softer, creamier and more earthy with age. We love ours wrapped in puff pastry and baked until oozy, or served on a cheese board with stone-fruit preserves. Buttery Chardonnay, American pale ale, and India Pale Ale are complimentary beverage partners.
Serving Suggestions: Serve with spiced pecans, dried fruits, oil-cured olives and savory crackers. Pairs well with Sauvignon Blanc, Sancerre, or other fruity white wines.
Ingredients: Cultured, pasteurized goat milk, salt, microbial rennet

Why Haystack Mountain cheese?
First off, it’s just delicious. Our cheesemaker Jackie Chang and her team have the patience, skill and sense of adventure to create cheeses known for their clean, fresh flavor profiles, free of “goaty” aftertaste. Even if you’ve shied away from goat cheese in the past, give Haystack’s a try. We can’t keep track of how many goat cheese converts we’ve won over with our products.
Second, all Haystack Mountain cheeses are handmade and free of additives or preservatives. We use the highest quality microbial (aka vegetarian) rennet, traditional cheesemaking techniques, and our cheeses are free of preservatives and artificial flavors. Nothing but pure delicious fat and protein.
Third, in keeping with tradition of the true Colorado locally sourced spirit, Haystack Mountain has partnered with our neighbor, Longmont Dairy, to create some of the most delicious cheeses made from cow’s milk and cow/goat milk blends. We’ve also partnered with CCI for our goat milk supply, and enjoy a mutually beneficial arrangement which enriches the lives of our community. We fully support our local friends, families and neighbors and we look forward to many more years of serving the cheeses we love to the people we love.
