2018 American Cheese Society 1st Place Award Winner

Gold Hill was created by Haystack Mountain Creamery's cheese maker, Jackie Chang, and named for one of the original gold strikes in north central Colorado. It is a Spanish/Portuguese style cheese, but made with pasteurized goat milk and additional cultures to bring out a balanced buttery and tangy aroma. This semi-firm natural rind is aged for six to twelve months, which allows it to develop its nutty, earthy notes. Gold Hill not only took home a Super Gold at the 2017-18 World Cheese Awards in London, England but also won the award for Best American Cheese.

As versatile in the kitchen as it is on the table, you will find Gold Hill a delicious domestic stand-in for Spanish and Italian imports. Gold Hill won a first place award at the American Cheese Society contest in 2017.

Serving suggestions: Makes a mean pesto, or grate or shave onto pasta, potatoes, salads, eggs, or vegetables. Melt in sandwiches, macaroni and cheese, or casseroles. Whip up a soufflé. On the cheese plate, pair with smoked meats, olives, and toasted nuts.

Pairing suggestions: Heifeweizen, or light-to-full-bodied red wines such as Tempranillo or Garnacha or spicy Spanish Rosé.

Your cheese is hand picked and shipped right from their cheese cave to your door. To ensure the quality of the cheese during delivery, all shipments will go out Monday through Wednesday with 1-2 day delivery.

First off, it’s just delicious. Our cheesemaker Jackie Chang and her team have the patience, skill and sense of adventure to create cheeses known for their clean, fresh flavor profiles, free of “goaty” aftertaste. Even if you’ve shied away from goat cheese in the past, give Haystack’s a try. We can’t keep track of how many goat cheese converts we’ve won over with our products.

Second, all Haystack Mountain cheeses are handmade and free of additives or preservatives. We use the highest quality microbial (aka vegetarian) rennet, traditional cheesemaking techniques, and our cheeses are free of preservatives and artificial flavors. Nothing but pure delicious fat and protein.

Third, in keeping with tradition of the true Colorado locally sourced spirit, Haystack Mountain has partnered with our neighbor, Longmont Dairy, to create some of the most delicious cheeses made from cow’s milk and cow/goat milk blends. We’ve also partnered with CCI for our goat milk supply, and enjoy a mutually beneficial arrangement which enriches the lives of our community.
