To ensure the quality of the cheese during delivery, all shipments will go out Monday through Wednesday with 1-2 day delivery.

In the idyllic, pastoral fields of rural Central Pennsylvania is a family owned and operated artisanal cheese crafting facility - Hidden Hills Dairy. Grazing among the rolling hills and pastures at Hidden Hills Dairy is their own milk producing herd of Jersey Cows. The Jersey is one of the oldest dairy breeds, having been monitored by authorities and documented as being purebred for nearly six centuries. The fawn colored cows have been bred for their exceptional milk and butterfat.
Each year from April through October, their cows experience the freedom of natural grazing on wide open spaces. This facilitates superb nutrition made possible by intensive grazing which lays the foundation for amazingly tasty and delicious cheese. The quality of their cheese begins with quality milk from contented, stress free cows. All of their cheeses are made with raw milk so each cheese is aged for a minimum of sixty days. No dyes are used in the production of their numerous cheeses. The color comes from the natural seasonal colors found in the milk. Summer cheese, made when the cows are on pasture, will have an enticing, golden color because of the higher levels of carotene in the cows’ diet, while cheese made in the winter months, when they are eating hay, will have a delicate, creamy color.
