Hidden Hills Dairy Old Gold GoudaHidden Hills Dairy
Sometimes old gold needs to be polished to bring back its lustre but not Hidden Hills Creamery’s savory Old Gold Gouda. Their Old Gold Gouda gets sharper, brighter, and more flavorful as time goes by. The beautiful warm gold color and wonderful caramel sweetness comes from the interlaced fusion of flavors attributed to the sweet summer grasses of Central Pennsylvania. That is why Old Gold Gouda is only made during the summer months when their herd of Jersey cows are lumbering serenely and content through the pastures. The natural milk from pasture fed cows is the key ingredient to Old Gold with the rich gold color coming from the Beta-carotene found in summer grasses. Add natural veal rennet, salt, cultures and at least a year of aging and Old Gold Gouda will be ready to assail your senses with its earthy aroma and lingering sharp taste.
Old Gold is a semi-hard, artisan, cheese with a compact, crumbly, dense yet springy texture. Gouda originated in the Netherlands where it was commonly used to richen soups and sauces. It is wonderful as a final addition sprinkled over a hot pizza straight out of the oven.
It also makes an unforgettable creamy golden melted fondue pot. Try it to add a new depth and full-bodied flavor to your everyday macaroni and cheese. Risotto lovers - melt this golden delight through the risotto at the very end and present your family and friends with a gift from your kitchen.
This well-aged golden gem goes hand-in-hand with deeply flavored wines such as a rich Merlot, Cabernet Sauvignon or Shiraz.
Ingredients: milk, natural veal rennet, salt and cultures

In the idyllic, pastoral fields of rural Central Pennsylvania is a family owned and operated artisanal cheese crafting facility - Hidden Hills Dairy. Grazing among the rolling hills and pastures at Hidden Hills Dairy is their own milk producing herd of Jersey Cows. The Jersey is one of the oldest dairy breeds, having been monitored by authorities and documented as being purebred for nearly six centuries. The fawn colored cows have been bred for their exceptional milk and butterfat.
Each year from April through October, their cows experience the freedom of natural grazing on wide open spaces. This facilitates superb nutrition made possible by intensive grazing which lays the foundation for amazingly tasty and delicious cheese. The quality of their cheese begins with quality milk from contented, stress free cows. All of their cheeses are made with raw milk so each cheese is aged for a minimum of sixty days. No dyes are used in the production of their numerous cheeses. The color comes from the natural seasonal colors found in the milk. Summer cheese, made when the cows are on pasture, will have an enticing, golden color because of the higher levels of carotene in the cows’ diet, while cheese made in the winter months, when they are eating hay, will have a delicate, creamy color.
The award winning and prestigious cheese crafted at Hidden Hills Dairy comes from the milk their Jersey’s produce. Their cheese is on the #1 rated best pizza in Philadelphia as well as an ingredient in Philly’s best cheesesteak. Two stand-out achievements in a vast bustling city for cheese crafted not far away on a small country farm in Central Pennsylvania.
Hidden Hills Dairy’s goal is to produce a quality product that will have you coming back for more. They did and you will.
