Our Ricotta Affumicata, or smoked ricotta, is made with Texan taste buds in mind. Originally, it was a development from the mountainous region of Friuli created to prevent the ricotta from spoiling before it was transported down the mountain. By smoking it, cheese makers found the ricotta would last longer. We have adopted this classic recipe by smoking our ricotta fresca with pecan wood giving it a Texas flavor.

The exterior of the Ricotta Affumicata is brown and smoky while the inside is compact and light as in the color of ricotta. The smooth texture and sweet smoky flavor is a perfect fit grated on any dish or added to a cheese platter. Pair it with a dry white wine such as a Friulano.

Andrea Cudin puts a taste of his home in the cheese he makes. Cudin is from the mountainous region of northern Italy, where dairies abound. He moved to Victoria with his wife, a Victoria native. Educated in philosophy, Cudin struggled to find his place in South Texas. He was making cheese as a hobby then. It was during that time of self-reflection that Cudin decided to invest himself in the culture that made him different. He went back to Italy to learn the craft of cheese making formally and returned with a plan.
