Revittle Shepherd's Delight is a Pennsylvania Farm Show Blue Ribbon Cheese. Shepherd’s Delight is a Tomme style table cheese reminiscent of farmer’s cheese made and eaten on the farm. This cheese is remarkable for its simplicity and essential place in the rhythms of everyday life. Its production recycles leftover milk and its flavor is satisfying and honest.

This everyday cheese has a flavor far apart from a common everyday grocery cheese. It has a sharp taste and a firm texture and is made from fresh, raw, whole sheep’s milk. Its seasoned appearance is due to the aging process which takes place in a cave and ranges from 4 -12 months. The microflora in cave-aging creates the earthy rind. The “tomme-iness” or aroma is not unlike the cave it is aged in: Rustic, earthy, and loamy. This Tomme cheese is made during the summer months when the sheep are grazing on sun warmed sweet grasses.

Shepherd’s Delight Tomme is an exceptional, satisfying cheese, something to eat and enjoy on a daily basis. Wines such as Cabernet Sauvignon, Syrah and Zinfandel match deliciously with Shepherd’s Delight. Otterbein Acres, which is located in Newburg, Cumberland County, Pennsylvania, is an Amish farm providing organic artisanal cheeses and yogurt from goat, sheep and cow's milk and organic eggs. John Fisher is deeply devoted to sustainable agriculture and, as a result, for the better part of two decades, no chemicals have touched the soil on his farm. He believes sustainability is a better way to do dairy. His animals are all fed GMO free natural feed and raised without antibiotics. He believes the quality of his cheese is in direct correlation to the quality of his land. Otterbein Acres' cheeses are all natural rinded and aged on wood in an on-site underground cheese cave. John is very thankful to have the privilege to live the life he leads. "There is nothing more fun than walking the fields around my farm and seeing those birds and that wildlife there on that land. They are there because we are farming the way we are. I have a tremendous privilege to be here."

Making cheese is exciting and thrilling for John who speaks with a pureness that is manifested in his cheese. "I enjoy the process of making cheese. There's an excitement when I add rennet and my curd sets up nicely. There's a thrill when cutting into a wheel, especially when it is a new kind."
